Use different platform version of esp-idf

Hi everyone,
I installed the “Espressif 32” platform v 5.2.0 on my VS Code - PlatformIO.
I would like to update it to the latest version to use it only for a specific project but keep the old version (v5.2.0) for existing projects.
It’s possible?

builds may not be repeatable.

I used this string for every project I’ve done, what kind of risks have I taken?
